What's the difference between White and Green tea?

Both varieties of tea comes from exactly the same Camellia Sinensis plant. The difference is all in the processing and particularly when the tea gets harvested.

White tea buds are plucked just before they open and are withered to allow the natural moisture to evaporate. They are then dried immediately. The curled up buds have a silvery appearence and produce a pale, gold coloured tea.

Green teas are picked later in the process and go through a minimal amount of processing. They are lightly oxidized and contains slightly higher caffeine than white. White tea also retains more anitioxidants than green tea.
