Does anyone have any tips on how to estimate the amount of food to prepare per adult guest at a dinner party? I will be serving an appetizer, salad, fish, rice, dessert, as well as tea and wine.

For hors d'oeuvres plan on 6 pieces per guest and for the main entrée 6 ounces per person.

Since filleted fish is not as filling as some other main entrees, I would plan on having 2 cups of cooked rice per person.

To be on the safe side, I would serve a variety of teas thus not having to worry about beverages. I have noticed by the time dessert is served, most guests prefer small portions.
