Preparing for Dinner Party Using Different Teas 4 Months, 2 Weeks ago  
I would like to serve a different tea with each course at my dinner party, similar to what some host do with wine. I am not sure which teas to purchase before my party. Which tea is most complimentary to a bisque, a mixed green salad, a poultry entrée, a beef entrée, and pastry dessert?

I recently read an article claiming green or white tea is best served with pastries and green salads.

Oolong tea is best served with spicy foods, seafood and poultry (especially if you use thick cream sauce). You could serve oolong with your bisque and or poultry.

Green Tea also goes well with poultry. Should you select this, you could serve White Tea with your salad. If your pastry dessert has a mild filling, Jasmine Tea is known to add more zest to milder foods, including white rice and scones.

How about a fruit infused tea with your dessert? The taste of this tea is especially delicious with custards or vanilla and lemon filling desserts.

I recommend serving oolong tea in addition to the other suggestions throughout the meal. For dessert, serve two teas of your choice. This will accommodate traditionalists and contemporary tea drinkers.
