You could probably have a graduation party and give your boss 'awards' (simple and funny ones). I read how you described your boss in another thread (about a leaving gift for her) as "nice, organized and efficient". I'm sure you can think of plenty of 'awards' for her.

I think you should keep it simple so you can all have more time to talk and just have fun before your boss leaves. A wine-and-chocolate party will be nice. It's simple, but still very elegant.
