Are there certain fruits that may spoil thus should not be used with infused tea?

I think all fruits spoil at some point.
I have tried apple, mango, lemon, pineapple, grapes and pears to my tea, and they all tasted very well.

I believe as long as fruit is cleaned thoroughly then processed using hydration drying methods, it will not spoil. However, when dehydrating fruit the flavors may slightly be altered, with some more pungent and others more bland in taste.
