Three rare oolongs, a guided tasting

Why oolong is special
Oolong is semi oxidised tea, a craft that lives between green and black. That middle ground creates layered flavour and aroma, calm focus, and a long finish.
- Balanced energy, a gentle lift from caffeine, usually experienced as clear rather than jittery, helped by L theanine naturally present in tea.
- Complex yet smooth, careful oxidation and roasting develop fruit, floral, mineral, or cocoa notes without harsh bitterness.
- Made to re steep, quality leaves keep giving, each infusion revealing new facets.
- Food friendly, pairs easily, fruit and light desserts, roasted nuts and chocolate, even mild cheeses.
What shapes an oolong
- Oxidation level, lighter styles lean floral and honeyed, darker styles lean toasty and cocoa like.
- Roast, sets aroma and deepens sweetness.
- Leaf shape, twisted strips or rolled pearls influence how the cup opens over multiple infusions.
- Origin, rocky cliffs, high mountains, coastal breezes, each place leaves a signature.
